Chicken Salad
This chicken salad is perfect for an easy lunch or dinner, especially when using leftover grilled or cooked chicken! The extra ingredient additions like celery, dried cranberries, and pecans make it simply irresistible and satisfying!

Ingredients
Chicken Salad Ingredients

cooked chicken
cubed

celery
diced (~2 stalks)

green onion or fresh chives
thinly sliced

dried cranberries or cherries

pecans or almonds
coarsely chopped
¾ - 1

mayonnaise or Miracle Whip
Salt & pepper
to taste
Additional Ingredients for Serving
butter lettuce leaves
tomato slices
multigrain bread, mini brioche buns, mini croissants, or tortillas
Instructions
Mix all ingredients except the mayo in a bowl until combined. When ready to serve, add the mayo and stir well to fully coat all ingredients.
Place prepared chicken salad on toasted bread or rolls with lettuce.
